Shall start off with something i made recently...tried a Banana Cake yesterday...was not sure how it would turn out....but looking at the the speed with which it disappeared off the plate,I guess it is worth sharing :)
Unfortunately I didnt get a picture of the cake
BANANA CAKE

Wheat flour (Atta) 1 cup
Mashed banana (Robusta) 1 cup
Eggs 2
Powdered sugar 3/4 cup
Milk 1/4 cup
Baking Powder 3/4 cup
Baking soda 3/4 cup
Vanilla Essence a few drops
Salt a pinch
Vegetable Oil 1/4 cup
Cashew bits and raisins 1/2 cup

Method

Mix the Atta,Baking powder nd soda and Salt and keep aside

Beat Eggs and sugar in a mixing bowl with a blender. Add the oil and mix well
To this mixture add the flour and milk and mix well. Add the vanilla essence and then fold in the mashed banana. Put in the cashew and raisins and stir it in

Pour into a greased baking dish and bake in a preheated oven at 160 deg for about 40 mins or till the crust is golden brown.

Note: I find that banana cake/loaf tends to be a little sticky if not allowed to cool well.....most of the time my cakes dont get sufficient cooling time as it is attacked by the kids as soon as it is out of the oven :)

Let me confess....i never entered the kitchen till i finished graduation. The 1st time I cooked independently was when i shifted to Mumbai after internship,to stay with my brother. Played safe by jotting down all of Amma's recipes...and cooked for the two of us. Picked up a few tips from friends in the campus ,collected recipes from friends and managed pretty well.
My interest in cooking grew only 'cos my dear husband encouraged me to experiment with new recipes.... and later my kids did the same. But there are standing instructions from the kids..that i stick to making cakes,biscuits,desserts only :)

I dont cook regularly..its an occasional trial whenever i take time off from the clinic and the net
